Chicken Scarpariello – a Gluten Free One Pot Meal
Posted by: | Comments
Chicken Scarpariello is an amazingly easy one pot chicken and sausage skillet meal that offers something for everyone. There are enough vegetables in this dish to really feel good about serving it, yet it offers two kinds of meats to keep the carnivores from complaining. Scarpariello means of the shoemaker which implies that the ingredients are so humble a shoemaker could afford to make this one. Visit the EZ Gluten Free blog at ezgf.blogspot.com to see this recipe in print or for more gluten free recipes. Ingredients list • 4 chicken thighs • ½ lb Italian sausage, cut into 1-2 inch lengths • 3 medium potatoes, sliced into large chunks • 1 red bell pepper, chopped in large pieces • 1 onion, chopped in large pieces • 8- 10 mushrooms, halved • 2-4 hot cherry peppers in vinegar, deseeded and torn into pieces • 2 cloves of garlic sliced • ½ cup white wine • about ¼ cup of cornstarch • 2 tablespoons of olive oil • old bay seasoning • salt and pepper For this recipe or more free healthy recipes, cooking tips and tutorials or go to www.favediets.com

For Those With Celiac Sprue…?

How long did it take for you to feel better after starting a gluten-free diet?

Answer by Anama
Some people feel better in a few weeks. I was so sick it took over a year. Not to depress you, but I was at the point that I was not sure that I was actually feeling better or if I had finally adjusted to being sick. Honestly, it was that bad.
It basically depends on where you start from. The less healing you have to do, the faster you feel better. Also age has a LOT to do with it, children always heal faster than adults…
Congrats on your diagnosis and I hope you feel better wayyy sooner than I did!
Happy Healing- ‘ Nama

Celiac Disease and Gluten Sensitivity
Posted by: | Comments
Celiac disease is an inflammatory condition of the small intestine triggered by the consumption of gluten, a dietary protein found in wheat, rye, and barley. About 85% of the people in the US with celiac disease remain undiagnosed. To help us understand this disease, experts from UCSDs Celiac Center discuss everything from diagnosis, impact on adults and children, and helpful diet tips. Experts include: Martin Kagnoff MD, Kimberly Newton MD, and Susan Algert PhD, RD. [12/2008] [Health and Medicine] [Show ID: 15359]

Going gluten free is not a choice for some people – it’s a medical necessity. Many children and adults are diagnosed with Celiac disease and a local support group is ready to help them deal with the diagnosis and special diet needs that accompany it.

I Have Lactose Intolerance and Celiac sprue….what Can I Eat?!?

You can actually eat quite a lot of things. A lot of food has gluten and/or lactose only because they are made commercially. When you actually cook for yourself, it’s possible to imitate most foods in almost exact flavor without using gluten/milk.
Here’s some ideas for you:
There is a gluten free soy sauce called Eden Tamari (White label, red words) check the back it should be gluten free.
For bread products(and know that they might be a bit grainy) use xanthan gum to imitate gluten without using wheat products
Most non-baked recipes can have milk replaced with a similar amount of water
If you like pasta, there is a brand called tenkyata (not sure on spelling) that comes in a clear plastic wrapping. That is the best gluten free pasta I’ve found so far.
If you have any questions about recipes or different foods, send me an e-mail at blubberyickything@gmail.com and we can talk more about this. I have been cooking since I was 12, and my friend was recently diagnosed with celiac sprue. Out of the two, celiac is a bit harder to deal with than lactose intolerance. I have a lot of gluten free recipes that I use, and I can easily manipulate a lot of them to become lactose free also.
