Question by orchidmg: have any easy and fast salad recipes?
I’ve recently been diagnosed with Celiac Sprue and can’t consume any gluten. I’ve bought some gluten-free foods but are expensive and I have to get use to the tastes. The one thing I can eat all the time are fresh fruits and veges. I’ve basically been eating vege salads. Can anyone suggest fruit salads that you like. Something besides just cutting up some fruits and throwing them into a bowl. Are there fruits salads with dressings or healthy dips? Has anyone combined fruits with veges? I can eat chicken and turkey so I’m also looking for a salad recipe that I can add that to. Thanks for your help!

Song: Enya – How Can I Keep From Singing? Lisztérzékenység / Glutén-érzékenység: A lisztérzékenység orvosi neve coeliakia, amelynek oka a lisztben található fehérjékkel szembeni túlérzékenység. Question by mchri954: For those with Celiac Sprue…?
How long did it take for you to feel better after starting a gluten-free diet?

Best answer:

Answer by Anama
Some people feel better in a few weeks. I was so sick it took over a year. Not to depress you, but I was at the point that I was not sure that I was actually feeling better or if I had finally adjusted to being sick. Honestly, it was that bad.
It basically depends on where you start from. The less healing you have to do, the faster you feel better. Also age has a LOT to do with it, children always heal faster than adults…
Congrats on your diagnosis and I hope you feel better wayyy sooner than I did!
Happy Healing- ‘ Nama

Question by vicky p: i have lactose intolerance and celiac sprue….what can i eat?!?

Best answer:

Answer by Panda Moose
You can actually eat quite a lot of things. A lot of food has gluten and/or lactose only because they are made commercially. When you actually cook for yourself, it’s possible to imitate most foods in almost exact flavor without using gluten/milk.

Here’s some ideas for you:
There is a gluten free soy sauce called Eden Tamari (White label, red words) check the back it should be gluten free.

For bread products(and know that they might be a bit grainy) use xanthan gum to imitate gluten without using wheat products

Most non-baked recipes can have milk replaced with a similar amount of water

If you like pasta, there is a brand called tenkyata (not sure on spelling) that comes in a clear plastic wrapping. That is the best gluten free pasta I’ve found so far.

If you have any questions about recipes or different foods, send me an e-mail at blubberyickything@gmail.com and we can talk more about this. I have been cooking since I was 12, and my friend was recently diagnosed with celiac sprue. Out of the two, celiac is a bit harder to deal with than lactose intolerance. I have a lot of gluten free recipes that I use, and I can easily manipulate a lot of them to become lactose free also.
