Celiac disease is an inflammatory condition of the small intestine triggered by the consumption of gluten, a dietary protein found in wheat, rye, and barley.     at one point wheat was healthy now its a disease? Soooo because some of us cant have wheat we are a walking living breathing disease?

    Italy seems to have the highest rates of Celiac disease and it may have come from intermingling between Europeans and Africans over the years. I’m one quarter Italian and developed the disease at the age of 52 although signs pointed to it earlier.

    @uctelevision Gluten and dairy is POISON!!!..we are all miserable and sick because of it!! kids have ADD and autism from it, and the food industry just wants us to consume more and more!!

    Does or can celiac disease ever cause belching that tastes/smells like hydrogen sulfide (think rotten eggs)?

    This is a very interesting video, helpful. Nuchia Foods makes a Gluten Free flour made of course from the Chia Seed. It is gluten free and can be used raw or in baking. Not only that it taste good it is loaded with nutrients and Omega-3.

    I was hypothesizing @abcdefghism This is certainly true with lactose – the history of dairy is much less outside if Northern Europe. Bread is quite new in Africa…

    I don’t know what the numbers are but there is a very small number if Africans and Asians while in the Europeans, the number is much higher.

    Is there a racial factor in the genes? Likely that those with a Wheat eating heritage such as Northern Europeans might not. Aboriginals would be the opposite and be very much at risk as they are to sugar. Those of African heritage might be more at risk than Northern European.

    Any information on this?

    @Amybabylol When we go into a healthy change w/a whiner baby attitude it just makes it worse. I like your bakery idea. At your tender age peer pressure is soo strong but really… I don’t give a dang what my friends/family or anyone else thinks if its going to be negative. And… you may be surprised that as you open up to your friends that you not only find who your true friends are but may even find you have friends that are struggling w/their own issues. Maybe start a support group?!

    @SlimLes To tell the truth i always had a dream about opening a bakery just for that but first i need to learn how to bake, and not make a large puff of smoke in the kitchen :) …. I cant get myself to tell any of my friends because im scared they wont understand, and will treat me differently. Im sorry i didnt know what you have, im sorry i have times where i can be very mean and stupid im sorry. I shoudnt of said those things. I hate myself, i should stop whining.

    @Amybabylol Griping & whining is only makes it worse. And yes I do know what it’s like. I can’t have grains or sugar of any kind but I’m not crying about it. It’s ok to morn your loss at first but you stated you’ve had this disease for 6 years. Time to quit complaining and find ways to cope w/the disease where you can still be w/your friends and family and be a happy child as you so much deserve. Research on your own for recipes that you can make that taste good, maybe you’ll help someone else!

    @SlimLes Will you please let me whine im tired of people telling me to grow up. I never said that i have the WORST childhood its just i cant feel like a normal child. I cant go to Dunkin Donuts and ask for a donut! Its scary u have no idea what ive been thru so dont tell me to grow up! Dont think that just cuz ur older than me which i assume that u have power over me… u ccan say what you want but u can never break me…. Actually i gues this disease did teach me something. tO be stronger……

You are not the only one on the planet that has a less then perfect childhood. Try being from an abusive home then being orphaned. Life is precious if you would only look at the good you would see that. Get over yourself and grow up!!!

    Gluten Sensitivity RUINED My life! NOTHING good came to me! It just meant i cant live a life normally, I hate it! IM 12! MY LIFE IS RUINED, I HAVE A RREALLY TERRABLE FEAR OF NEEDLES SO THE BLOOD TESTS ARE JUST ANOTHER THING, WHENEVER PPL ASK ME WHY WONT YOU EAT? I HATE EXPLAINING I HATE EVERYTHING! INSTEAD OF FINDING A WAY TO GET TO MARS MAYBE THEY SHOOD USE THEIR FUCKIN TIME TO CHANGE THIS SO NO OTHER CHILD HAS TO GO THRU WHAT IM GOING THRU! ITS BEEN SIX YEARS, I CANT EAT A DOUGNUT!

    I’ve been doing a GF diet, but have not noticed much difference, but as you said xanthan gum is in almost everything GF, so after reading your blurb, I wonder if I am having the same problem…what do you eat?

    i eat kellogs rice crispies which contain Barley but i lm ok but im senertive with wheat can people have different diagnoses

    That isn’t true. You shouldn’t be eating barley and rye for sure. Oats are usually contaminated with wheat. And the oat protein is similar enough to wheat gluten that mostly it’s just celiacs who’ve been gluten-free for many years who can tolerate it.
    You probably have other food sensitivities and don’t know it because you keep on eating the foods.

    i can’t eat any of that stuff, and xanthan gum gives me symptoms just as if i had eated gluten. i’m loosing my ability to eat dairy after 3 yrs GF. you can’t eat that stuff if you ahve celiac… oats are okay if they are certified GF.

    lol i have celiac…. you can have just about anything other than wheat, (flour) like 80%% of oats,barley and rye, and some ingredients in packaged food ( such as chips,candy,and soda ;) ) maltodextrin, hydrolyzed anything, modified food starch, ( modified cor starch and soy starch r ok just not food starch, and some more :D lol

    How come some people that have DQ2 & DQ8 genes do not acquired celiac Dz when 33-AA crosses their GI barrier??
