Have Any Easy and Fast Salad Recipes?

I’ve recently been diagnosed with Celiac Sprue and can’t consume any gluten. I’ve bought some gluten-free foods but are expensive and I have to get use to the tastes. The one thing I can eat all the time are fresh fruits and veges. I’ve basically been eating vege salads. Can anyone suggest fruit salads that you like. Something besides just cutting up some fruits and throwing them into a bowl. Are there fruits salads with dressings or healthy dips? Has anyone combined fruits with veges? I can eat chicken and turkey so I’m also looking for a salad recipe that I can add that to. Thanks for your help!

1/4 cup balsamic vinegar
3 tablespoons water
1 1/2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 large clove garlic — minced
1/2 cup small broccoli flowerets
1/2 cup small cauliflower flowerets
1/2 cup julienne-cut carrot
1/2 cup julienne-cut red bell pepper
4 cups cooked farfalle — (bow tie pasta)
cooked without salt
2 tablespoons thinly sliced fresh basil
1/4 cup grated Asiago cheese — (1 ounce)
Combine vinegar and next 5 ingredients in a jar; cover tightly, and shake vigorously. Set aside.
Drop broccoli, cauliflower, and carrot into a large saucepan of boiling water; cook 30 seconds. Drain. Pour cold water over vegetables; drain.
Combine drained vegetables, bell pepper, and next 3 ingredients in a large bowl. Add vinegar mixture, and toss gently. Cover and chill.
Yield: 5 servings

(And if there’s any glutens in the recipe, I’m sorry, I’m not exactly up on what products have it, haha).
Mimosa Fruit Salad
3 cups boiling water
2 pkg. (8-serving size each) JELL-O Brand Orange Flavor Sugar Free Low Calorie Gelatin
4 cups cold club soda
1 can (11 oz.) mandarin orange segments, drained
2 cups sliced strawberries
STIR boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in club soda. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
STIR in oranges and strawberries. Pour into 9×5-inch loaf pan sprayed with cooking spray.
REFRIGERATE 4 hours or until firm. Remove from loaf pan. Store leftover gelatin in refrigerator.
Poppyseed Fruit Salad
1/3 cup KRAFT Creamy Poppyseed Dressing
1/3 cup strawberry low-fat yogurt
2 cups halved strawberries
2 cups seedless green grapes
2 medium kiwi, peeled, sliced
1 small cantaloupe, sliced
1 small honeydew melon, sliced
1 medium star fruit, sliced
MIX dressing and yogurt until well blended.
ARRANGE fruit decoratively on platter.
SERVE with the dressing mixture.
Crunchy Holiday Turkey Salad
1/4 cup MIRACLE WHIP Light Dressing
1/4 cup finely chopped green onions
1/4 cup finely chopped celery
1/4 cup grated carrot
2 Tbsp. dried cranberries
2 cups chopped cooked turkey
MIX dressing, vegetables and cranberries in large bowl.
ADD turkey; mix lightly. Cover. Refrigerate at least 30 min. or until ready to serve.
Curried Carrot Salad
1 lb. carrots, peeled, shredded
1/2 cup raisins
1/3 cup sliced green onions
1/2 cup KRAFT Mayo Real Mayonnaise
1-1/2 tsp. curry powder
1 Tbsp. white vinegar
1 Tbsp. honey
1/4 tsp. salt
TOSS carrots with raisins and onions in large bowl; set aside.
MIX all remaining ingredients with wire whisk until well blended. Add to carrot mixture; toss to coat. Cover.
REFRIGERATE 1 hour or until ready to serve.
A fruit salad that my family loves and requests often is so easy to throw together. I hope there is nothing here that you cannot enjoy
Fruit Salad
1 large can of fruit cocktail (do not drain)
1 large can of pineapple chunks (drain)
2 small cans of mandarin oranges (drain)
1 large package of instant vanilla pudding
1 8 oz container of cool whip
Sprinkle the instant pudding over fruit cocktail, stir until the pudding dissolves. Add pineapple chunks and oranges. Mix well. Fold in cool whip and chill before serving.
*I always use the ‘lite’ fruit, fat free/sugar free pudding and fat free cool whip. It still tastes great!
How about making Chinese stir fry with chicken.
Now I know not everyone has a Wok like myself, but a large cast iron skillet will do.
Chop one onion, 2 cloves garlic, place into oiled pan on medium heat.
You will then add veggies that you like, remember to put in the harder veggies first as they take longer to cook, celery, sliced carrots,mushrooms bean sprouts , water chestnuts etc.
Remember to keep them moving around and dint over cook them. Add some pre cooked chicken if you like.
For the sauce, if you are inexperienced I suggest buying a bottled Teriyaki from the market , dont add too much.
BEETROOT AND DILL SALAD
An energy-giving salad, rich in vitamins.
Cooking Time : Nil.
Preparation Time : A few min.
Serves 4.
Ingredients
4 medium-sized beetroots, boiled
2 tablespoons chopped fresh dill
For the dressing
vinaigrette dressing
FRENCH BEANS WITH SESAME SEEDS
The everyday healthy salad.
Cooking Time : 5 min.
Preparation Time : 10 min.
Serves 4.
Ingredients
2 teacups french beans, sliced
1 teacup green cucumber, cut into big pieces
2 tablespoons celery chunks
2 tablespoons sesame seeds, roasted
For the dressing
vinaigrette dressing
FRENCH DRESSING (PVC)
Preparation Time : a few minutes.
Cooking Time : Nil.
Makes about 1 teacup.
Ingredients
1 teaspoon salt
3 tablespoons powdered sugar
1 teaspoon mustard powder
1 teaspoon pepper
1 teacup salad oil
1/2 teacup white vinegar
1 garlic clove, chopped (optional)

1.
Combine the ingredients in a jar, cover and shake vigorously to blend.
Cut whatever vegetables you like like cucumber, lettuce, tomato, red and yellow pepper (capsicum) you can even add boiled chiken pieces and add the ‘Knorr ‘ salad seasoning packet of(vinega with garlic) which you can find at any supermarket or grocery and add maybe one tablespoon according to the amount of cut stuff and toss it well, its really yum!!!
Romaine lettuce premade salads are great for add ons I added toasted pine nuts, bacon bits, shredded cheese, tomatos, cucumbers, green onions and topped it off with jalepeno ranch dressing. Grilled chicken is really good on it.

Gluten-Free Diet: GF Recipes: Taco Salad
Ingredients
1 1/2 lb ground beef, browned and drained
1 16-oz can red kidney beans, rinsed and drained
1 head lettuce, shredded
1 lb cheddar cheese, grated
4 tomatoes, diced
4 to 6-oz GF Russian dressing
1 10-oz bag GF corn chips, crushed
Directions
Mix together beef and beans; chill 3 hours or overnight. Place in large bowl and top with lettuce, cheese and tomato. Before serving, add corn chips. Toss. Add dressing. Toss and serve.
