You can actually eat quite a lot of things. A lot of food has gluten and/or lactose only because they are made commercially. When you actually cook for yourself, it’s possible to imitate most foods in almost exact flavor without using gluten/milk.
Here’s some ideas for you:
There is a gluten free soy sauce called Eden Tamari (White label, red words) check the back it should be gluten free.
For bread products(and know that they might be a bit grainy) use xanthan gum to imitate gluten without using wheat products
Most non-baked recipes can have milk replaced with a similar amount of water
If you like pasta, there is a brand called tenkyata (not sure on spelling) that comes in a clear plastic wrapping. That is the best gluten free pasta I’ve found so far.

I have been cooking since I was 12, and my friend was recently diagnosed with celiac sprue. Out of the two, celiac is a bit harder to deal with than lactose intolerance. I have a lot of gluten free recipes that I use, and I can easily manipulate a lot of them to become lactose free also.
